DESCRIPTION

Montelobos Ensamble Mezcal is made in Palenque del Tentzo, San Nicolás Huajuapan, Puebla. The process begins with papalote, espadin and tobalá agave plants without the use of pesticides and herbicides. The piñas (hearts) of the agave are harvested with machetes and roasted in underground volcanic rock pits, which takes 5 to 7 days.

After the cooked agave plants are cut and chopped, the juice is fermented in outdoor pine barrels, which takes 7 to 10 days. The liquid is then double distilled in copper pot stills. The resulting mezcal is complex with contrasting aromas and flavors of capers, nutmeg, pink pepper, cooked agave, citrus and smoke. The aroma of Montelobos mezcal is of cooked agave, smoke and citrus, while the flavor features capers, nutmeg and pink peppercorn.
